Breakfast Parfaits

These pretty breakfast parfaits are layered with Greek yogurt and granola so they make a substantial and filling morning meal. You can serve them in dessert glasses, or a mason jar as a “to-go” meal. You can make them as much as a few days ahead, or just have the components on hand and throw one together in the morning just before serving.

Ingredients

  • 12 oz bag frozen mixed berries
  • 2 to 3 TBSP sugar (brown or white)
  • 2 tsp cornstarch mixed with 1 TBSP water
  • 32 oz tub of Greek yogurt (plain or any flavor, I use vanilla)
  • 3 cups granola (I used Homemade)

Instructions

  1. Place the frozen berries in a medium-size pot with the sugar and a splash of water.
  2. Cook over medium heat until the berries are soft but still hold their shape.
  3. Stir the cornstarch mixture in, and continue to stir until the berry mixture is thickened.
  4. Removed from the heat and leave to cool completely.
  5. When the berry mixture is completely cooled, use it to make the parfaits right away or refrigerate for up to a week.

When I make my parfaits I layer them like this…

  • 2 tablespoons of granola
  • 1/3 cup yogurt
  • 1/4 cup granola
  • 3 tablespoons of berry mixture
  • 1/4 cup granola
  • 1/3 cup yogurt
  • 1 tsp of granola sprinkled over + a small dollop of berry mixture

–> You can layer them any way you’d like. Just keep in mind that if you make them up ahead of time the granola won’t stay crunchy.

Makes 4 to 6 Parfaits

Notes

  • I used homemade granola with just oats and almonds. I used maple syrup as the sweetener and a heaped teaspoon of cinnamon for flavor.
  • I put a little granola on the bottom of the parfaits because I think it makes it easier to get it all out later.
  • You could always use fresh fruit and/or jam if you don’t want to make the berry layer.
  • You can also make them less fancy and easier to transport by using mason jars.
