Chia Coconut Pudding

This pudding requires no cooking at all! No stove, no microwave, and no oven. This is a totally raw pudding with some really good healthy ingredients. It’s creamy and delicious so it makes a great dessert, but it also makes a great breakfast! Yup, if you are “off gluten” or doing the low carb thing, this is a great dessert or snack or ridiculously fast breakfast. Just make some up early on Sunday, after it has thickened, portion it out for the week and have an awesome grab-n-go breakfast!

If you are overly concerned about the fat in the creams, remember, it’s a dessert. If you are not overly concerned about the fat in the creams, you’re probably into LCHF, go you!

Ingredients

  • 3/4 cup whipping cream
  • 1 13.5oz/400ml can of full-fat coconut milk
  • 1/4 teaspoon salt
  • 1/4c granulated sugar (or adjust to taste using another sweetener, such as honey or erythritol)
  • 1 TBSP vanilla extract
  • 1/2 cup chia seeds
  • 1/2 cup unsweetened shredded coconut
  • 2 TBSP flax seed meal (optional)

Instructions

  1. Mix all ingredients in a deep bowl until well blended.
  2. Cover and let sit for 15 minutes and then stir.
  3. Place in an airtight container and refrigerator for at least 4 hours.

The pudding will be extremely thick and will keep for up to a week in the fridge.
