I have some nice recipes to post for this month. I’ve stayed put, determined to ride this out, and make the best of things. I’ve been cooking and baking nearly every day, and I started doing some experimenting with cast iron pans. I’d used them before but I always got to a point where I felt they were more hassle than they were worth. This time, however, I managed to get one to be seasoned properly and be totally none stick. I’d had the thing for like a year and barely used it. Then I was using for anything I could but it’s a griddle so I had to get a skillet to do more cast iron cooking. So, I got myself a medium-size skillet and managed to get that properly seasoned too. With my wonky electric stove it’s been so nice to not worry about one side of the pan lifting off the burner! Things are cooking and browning evenly, it’s easier to clean than a non-stick pan, and the food tastes better. I’m going to get a large cast-iron skillet next, and maybe a larger griddle. Now, if I could just figure out where to keep all these heavy pans in my little apartment kitchen.
