When I was growing up we had fresh green beans with bacon and onions or green beans from a can. Sometimes my mother would add a sprinkle of bacon bits in with the canned beans when they were heating. I never really had green beans any other way for most of my life. Then I tried this and I loved it. I don’t make it that often, but I always enjoy it when I do. I think it looks a bit fancy, and despite the butter, it’s a very light side dish.
Ingredients
- 1 lb. fresh or frozen green beans
- 2 TBSP butter
- 1/4 cup sliced almonds
- Salt and pepper
Instructions
- If using fresh green beans, be sure to trim them before boiling them in salted water until they are tender-crisp. Rinse them in cold water, and dry them thoroughly.
- Put a large frying pan over a medium-high heat and add the almonds. Stir them constantly for 20 to 30 seconds, or until they just beginning to brown.
- As soon as they get a little color, add the butter and stir it together with the almonds as it melts.
- Add the beans and stir until they are well coated. Cook, stirring frequently for a few minutes, or until the beans are warmed through.
- Season with salt and pepper to taste.
Makes 4 to 6 Servings
