This is a quick easy dressing that you can make in the microwave. You could use it over fresh cooked carrots or cooked frozen steamer bag carrots. It adds a nice flavor without overpowering the carrots.
Ingredients
- 3 TBSP orange juice
- 1/2 tsp orange zest
- 1/2 tsp dry parsley
- 1/4 tsp dry dill weed
- 1 TBSP light brown sugar
- 1/2 tsp fine sea salt
- 1/4 tsp fresh ground black pepper
- 1 TBSP butter
- 1 lb peeled, cut, and hot cooked carrot rounds
Instructions
- In a 2-cup heatproof measuring jug, whisk together the juice, zest, parsley, dill, brown sugar, salt, and pepper. Add the butter and microwave on high until the butter is melted.
- Whisk, then cook on high power for 1 minute. The mixture will boil and bubble furiously.
- Whisk and pour over cooked carrots. Gently toss the carrots in the sauce and serve immediately.
