IP Turkey Sloppy Joes

This recipe works really well in the IP, and the flavor is excellent. I like to use the really thin sliced Coby Jack from Sargento, it’s just the right amount of cheese to compliment the tangy sweet sauce.

Ingredients

  • 1 cup ketchup
  • 1 TBSP tomato paste
  • 2 TBSP Worcestershire sauce
  • 1 TBSP brown sugar
  • 1 tsp spicey brown mustard
  • 1 tsp dijon mustard
  • 1 tsp vinegar (I used apple cider vinegar)
  • 1/4 tsp Better Than Bullion, Beef flavor
  • 1/4 tsp dry oregano
  • 1/4 cup water
  • 1 TBSP oil for cooking
  • 1 softball size yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 generious tsp fresh minced garlic
  • 1 Lb of ground turkey
  • 1 TBSP of water mixed with 1 TBSP of cornstarch
  • Salt & pepper, to taste

To Serve

  • Large soft buns (potato buns are best)
  • Sliced Coby Jack or medium cheddar (optional)
  • Tots (optional)

Instructions

  1. Heat the Instant Pot on the highest saute setting. While it’s heating up, whisk together the ketchup, tomato paste, Worcester sauce, sugar, mustards, vinegar, Better Than Bullion, oregano, and cornstarch (mixture will be lumpy). Set aside until needed.
  2. Once the Instant Pot indicator says “HOT”, add the oil, onion, and bell pepper. Cook and stir until the onion starts to soften.
    Add the garlic and ground turkey. Break the turkey up with the back of a wooden spoon, and continue to cook it until it is well “crumbled” and no longer pink.
  3. Ppour over the prepard sauce, but don’t stir! Put on the lid and set the Instant Pot to manual high pressure for 5 minutes, then shut it off and let it natural release for 15 minutes. After 15 minutes of natural release, manually realease the rest of the preasure.
  4. Take off the lid, stir well and season to taste with salt and pepper. Turn the Instant Pot back on and use the saute setting to bring the mixture to a boil. Stir in the water and cornstarch, and stir constantly for 30 seconds. Shut off the Instant Pot.
  5. Serve on buns with slices of Coby Jack and a side of tots!

Makes 4 servings

Notes

  • This is good on toasted bread, in an open faced sandwich style.
