Spiced Walnuts

These are so good I could eat them until I feel sick! They are extremely easy to make, and aside from needing help with the hot oven and pan, they are a good recipe for kids to make. They are an excellent homemade gift and if you can find walnuts on sale, make huge batches of these for holiday gift giving (see notes).

Ingredients

  • 1 large egg white
  • 1 tsp water
  • 2 cups whole walnuts
  • 1/4 cup sugar (or the equivalent measure of a granulated sweetener of your choice)
  • 1/2 tsp ground cinnamon
  • 1/8 tsp fine sea salt

Instructions

  1. Preheat the oven to 325f and lightly oil a large baking sheet.
  2. In a large bowl, break up the egg white a bit with a fork and then add a teaspoon of water. Mix briskly until it’s foamy. Add the nuts and stir gently until all the nuts are well coated.
  3. Place the sugar, cinnamon, and pinch of salt into a large zip top bag. Use a slotted spoon to scoop out the nuts, letting the excess egg white drop back into the bowl before adding the nuts to the bag.
  4. Keep as much air in the bag as possible and seal. Shake and mix until the nuts are evenly coated. Pour out onto the prepared baking tray and bake in the preheated oven for 30 minutes, stirring every 10 minutes.
  5. Once golden, pour the nuts off the tray gently onto a heat proof surface and leave to cool completely.

Store in an airtight container at room temperature for upto a month.

Makes 2 Cups

Notes

  • To make larger batches, just remember that 1 large egg white is enough for 4 cups of walnuts. So, as you double the recipe to make larger batches just double the rest of the ingredients. To make 8 cups of spiced walnuts (quadrupled recipe), use 8 cups of walnuts, 4 large egg whites, 4 tsp of water, 1 cup of sugar, 2 tsp of cinnamon, and 1 tsp of fine sea salt.
  • You could omit the sugar and cinnamon. Use 1/2 a tsp each of fine sea salt and ground black pepper for a savory type version of this recipe.
